Weekend playing with food and light. This was my very first attempt at making Vanilla Slice. Last year I fell in love with it and I had to curb my addiction to the custardy delight when I started to feel the pinch with my jeans. Yesterday I came home from a shoot and got straight into whipping this up for a special afternoon with my parents-in-law. Late last night I was busy watching youtube videos and reading several recipes to make sure I got it right, with 8 of my chickens eggs on the line, plus half a litre of milk which would be needed if my daughter woke unsettled during the night the pressure was on to make sure this worked.
Feeling somewhat like a masterchef contestant, whisking and whisking the hot mixture over the stove, fighting the temptations to walk away even just for a couple of seconds incase the mixture turned to scrambled eggs. After lots of staring and whisking, whisking and changing hands, the mixture finally started to thicken and resemble custard. I was over the moon with delight.
Slicing it up today was such a pleasure and to see that it was actually delicious and not eggy or grainy gave me hope that perhaps I am more capable at making new things than I originally thought.
The above drink is a staple weekend/celebratory drink and as I was feeling like a cold was coming on, some extra lime and mint was squished in. I don't like my drinks too sweet and the mixture of fresh fruit, herbs and soda is always a nice mix, even without the vodka.
