Today has been a "sit at my computer all day" kind of day and after three lots of commercial & domestic editing and some drafting of assignments I was happy to be in the kitchen cooking up a healthy version of two-minute-noodles. I gently poached the chicken breast in the broth which is made up of water, soy sauce, bonito flakes (fish flakes), ginger, seaweed and spring onions. When the chicken was done, I browned it on both sides of a hot oiled pan and poured the broth through a sieve, putting the remnants into the compost bin outside of my kitchen window. I put a serving of noodles into my bowl and topped with ladles of clear broth followed by some sliced spring onion and chicken. To make it vegetarian just leave out the chicken & bonito flakes and top with steamed green vegetables or some fried or grilled tofu marinated in soy sauce and honey. Whilst I did feel like having a beer with it, I chose to stay on the healthy train and made an icy fruit smoothie!!
